Bread from Altamura
Giovanni from Leithaberg
Freshness index: 8/10
Crispy crust, airy crumb, intense sourdough flavor: Our Pane di Altamura is traditional baking at its best – straight from the Leithaberg!
Our Pane di Altamura, a traditional sourdough bread made from durum wheat, impresses with its crispy crust, airy crumb, and intense, slightly sour flavor – ideal for lovers of authentic baking! This durum wheat sourdough bread is actually a "Pane di Altamura," but that translates to "bread from Altamura," which would be just as inappropriate as "Dubai chocolate." We bake Italy's best bread at the foot of the Leithaberg mountain – and that's why we named our bread, which stands out like a sore thumb, after the Leithaberg mountain's most colorful dog, Giovanni. After three to four days of toasting in thin slices, it develops a unique aroma and becomes wonderfully crispy – an incomparable treat!

Pannolio sourdough wheat bread
Lucky child
Freshness index: 7/10
The further development of the "white awakening"
The 48 hours of dough fermentation, malting, and double baking give our pure wheat bread a full-bodied, slightly sour flavor, with a richness that's hard to believe, but it is. Well, what's learned is learned, or in this case, what's tried is tried.
Food pairings: It's perfect for dipping in olive oil, making it a wonderfully neutral base for an Italian cheese platter with olives and prosciutto. Vegans also get their fill of hummus dipping.

Pannolio Sauerteig Buttertoast
Bernd
Frischhalte-Index: 7/10

The Pannolio Freshness Index
Bread is a pleasure, a tradition, and a craft. Our Freshness Index shows how long each loaf of bread stays fresh and tasty without additives – depending on the ingredients and production process. This makes your bread a perfect everyday staple.
Baguette
Freshness index: 1/10 It dries out quickly because of the thin crust and airy crumb
White bread (toast)
Freshness index: 3/10 Stays softer for a little longer than a baguette, but not very long-lasting without additives
Wholemeal bread (100% wheat)
Freshness index: 5/10 The whole grain moisture extends the freshness somewhat, but it remains mediocre.
Mixed wheat bread (20% rye)
Freshness Index: 10/10 The best example of a bread that stays fresh for days due to hydration, rye and crust
Bread from Altamura (John)
Freshness index: 8/10 The finely ground semolina provides a dense structure that retains moisture well, but the freshness decreases slightly after 3-4 days.
Ciabatta
Freshness Index: 4/10 High hydration, but the open structure causes it to dry out faster.
